Abstract

From the ripe fruits of red mamey (Pouteria sapota), two new carotenoids, 3′-deoxycapsorubin and 3,3′-dideoxycapsorubin, were isolated and identified based on their UV/VIS, CD, 1H-NMR, and mass spectral data.
