As is well known, the knowledge of the qualitative and quantitative distribution of sugars and acids, present in various biological (urine fermentation liquor) and several natural matrices (fruits, vegetables, drug- and industrial plants, mushrooms, honeys) proved to be of primary importance from several points of view.In accordance with the chronological order of the development of the chromatographic methods, first, the possibilities of gas chromatography, thereafter, those of high-performance liquid chromatography have been shown. The advantages/disadvantages of these two main chromatographic methods, relating to this special topic will be presented in details. Copyright (C) 1999 Elsevier Science B.V.
