Abstract

The members of the Span emulsifier series have a marked influence on the physical, colloidical and rheological properties of the carbohydrate and lipogel constituents. Fluid emulsifiers increase, the solid ones decrease the specific deformation of the solid phase toward pressure. Upon addition of emulsifiers viscosity and rheological behaviour of the liquid phase undergo characteristic changes. The wetting of the solid phase increases up to a certain concentration of the emulsifier, then it remains unchanged or it decreases. Interrelations of the changes in the properties of the constituents and of the consistency are dealt with in the second part of the present study.
