The author examined the value of the contact angle characterizing the boundary surface in systems with two components (solid gel forming agent plus liquid phase) and with three components (lipophilic phase plus surface-active agent plus water). A correlation was found between the strength of the forces holding together the gel skeleton and the contact angle, i. e. the concentration of the surface-active substances, the water-absorbing capacity, the stability of the emulsion systems and the value of the contact angle.
