Abstract

It is obligatory to follow the whole food chain. In certain food chain sections it is easy to trace back, while in others the development of the system is extremely difficult. The products may be followed basically by two different systems, electronic and traditional recording. The authors present the following systems in the establishments processing different meats, including the "critical points" of the procedures.
