Abstract

Twenty-three mineral elements were investigated for their presence in some Agaricus and Pleurotus species and their cultivated sorts. On the basis of the results, the following conclusions can be made. The Agaricus species have remarkable accumulations of arsenic that are seldom reported in the literature (except for A. bisporus); this phenomenon could not be demonstrated in the Pleurotus species. A remarkable accumulation of cadmium was found in the Agaricus species (except for A. bisporus and A. xanthoderma). A accumulation of copper was measured in the Agaricus fruit bodies (25-260 mg/kg), while the average copper level in the Pleurotus species was 12.6 mg/kg. Only the Agaricus species can be characterized by an increased potassium and phosphorus content and this is advantageous from the point of view of nutritional-physiology.
